Steamed Fish Rolls with Tomato Vinaigrette

Ingredients (serves 4)
- 4 (about 700g) boneless, skinless white fish fillets
- 2 tablespoons grape seed oil
- 2 cloves garlic, crushed
- 6 spring onions, chopped
- 1 cup fresh wholemeal breadcrumbs
- 1/2 cup fresh basil leaves, chopped
- 1 cup fresh flat leaf parsley, chopped
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 250ml tomato juice
- 2 tablespoons white wine vinegar
- 1 tablespoon brown sugar
